Vegan Burrito – Thank You Mexican People!

It is so beautiful that there is so much variety in this world, isn’t it? Different cultures, different ingredients, different spices, flavours… So much to discover! I adore meeting new people and learning different things from them. I am so lucky that I had so many opportunities to interact with people from so many different cultures. I learnt so much and my head now is full of delicious ideas which I can use to create my scrumptious food art.

Today I am going to tease you with a healthy version of burrito. Why not! It’s nutritious, colourful and so delicious!  This traditional Mexican dish is simply a tortilla wrap with anything you like inside with or without meat. Main ingredients for today are: brown rice, kidney beans, spices, fresh herbs, vegetables and vegan cheese. When you put it on the grill and the cheese melts… need I really say more?

  • diet no gluten, diary, meat, sugar, yeast, nuts (it’s vegan)



  • gluten free tortillas (one per person unless you are extra hungry)
  • a glass of brown, boiled rice (you can use a good quality white rice, but it has less nutritional value; brown rice has more fiber and makes you full for longer)
  • 1 can of kidney beans
  • fresh coriander
  • fresh chives
  • red bell pepper
  • salt (Himalayan or sea salt – up to you)
  • black pepper
  • 1 lime
  • vegan cheese (or other if not vegan – up to you)



  1. I boil the rice according to the instruction on the box (brown rice boils longer than white) add a little turmeric for the yellow colour
  2. I get a large bowl
  3. Then drain the beans and put them into the bowl
  4. Next I wash and chop other vegetables and herbs, then add them to the bowl
  5. Squeeze the juice from the lime, add it to the rest with salt and pepper
  6. I drain the rice when boiled and rinse it with cold water. Then I add it and mix it all together
  7. Finally I fill tortillas with the prepared stuffing, add grated cheese, wrap it and grill or bake for few minutes
  8. Serve warm and crunchy
