Turmeric & Black Pepper Tofuscrumble with Asparagus

Turmeric & Black Pepper Tofuscrumble with Asparagus, Vegan and Gluten Free. Asparagus are in season and there simply isn’t a better combination than the one of tofuscramble and asparagus; it tastes just sensational.

What is a tofuscrumble? Well, it’s nothing but crushed fried tofu. I guess you’ve heard about scrambled eggs, right? Tofuscrumble is kind of same but instead of eggs we use tofu.

Tofu is a very good option for people who are intolerant of dairy or eggs; that way you can still have that hearty Saturday breakfast  but as an alternative to just cereal. Tofu is also a delicacy which is very popular among vegans and vegetarians alike because it’s a fantastically rich source of wholesome vegetable protein, iron, phosphorus, magnesium, B vitamins and vitamin E.

I chose to add turmeric, one of the world’s healthiest spices. It’s the curcumin contained in turmeric that gives the tofuscrumble a beautiful yellow color. On top of that I added a generous amount of black pepper, because the piperine contained in black pepper activates all the salutary properties of turmeric. Turmeric may, for example, fight infections, strengthen immunity, resolve digestive problems, support brain function and even prevent cancer. It’s an amazing spice!

RECIPE

  • time of 20 minutes
  • difficulty easy
  • diet plant-based/vegan diet: without dairy, eggs, meat, gluten, sugar, nuts

WHAT YOU NEED

  • 10 green asparagus
  • 1/2 onion
  • 1 tofu
  • 2 garlic cloves
  • 1 small tomato
  • 1/2 teaspoon turmeric
  • 1 flat spoon of black pepper
  • Sea salt or Himalayan salt
  • coconut oi

METHOD

  1. I add a teaspoon of coconut oil on the frying pan
  2. Next I peel the onion and garlic, finely cut and add to the oil. I fry for a minute and add finely chopped tomato, turmeric, pepper and salt
  3. I crush the tofu (into small pieces) and add directly on the frying pan. I mix everything together, so that the tofu gets the beautiful, yellow color (like eggs). I fry it all for 5 minutes
  4. I wash the asparagus, get rid of the bottom bits, cut into small pieces and add to the frying pan. I finally fry it all for 5 minutes, keep the asparagus al dente. After about 15 minutes your tofuscrumble is ready!Bon Appetit.
