The Perfect Almond – Garlic Creamy Soup – Vegan Delicious Must Eat. I recently discovered the “Ajo Blanco” soup here in beautiful Andalucia. It’s a typical Spanish dish traditionally served cold (next to the gazpacho). It’s simply wonderful during really hot days.

My recipe for today is a little (some would say a giant!) twist to this traditional soup variety. Well, since I love hot soups and yes, even in summer, I decided to make a hot version of the famous “Ajo Blanco”. And guess what? It was a spot-on decision! Don’t worry – the scent of garlic will not stay with you afterwards. That’s because baked garlic has a unique sweet yet soft taste. Here you are: The Perfect Almond – Garlic Creamy Soup – Vegan Delicious Must Eat.

RECIPE

WHAT YOU NEED

 

  • 3 heads of garlic
  • 1 medium onion (peeled and cut finely)
  • 2 tbsp of coconut oil (or rapeseed oil)
  • 1 tbsp of apple vinegar (optional, depending on your preference)
  • 200g of roasted almonds
  • salt (Himalayan or Sea Salt)
  • 1 rye roll (toasted)
  • black pepper
  • fresh parsley (chopped)
  • 1 orange

 

METHOD

 

  1. Bake garlic in the oven (unpeeled) in 180°C for about 30mins. Or if you have a  grill, only for 10-15 mins. The cloves must to be delicate and soft after baking

  2. While garlic is in the oven, put peeled and cut onion in the pan (the one you’ll cook the soup in) and fry it with a pinch of salt until it blushes a little. Pour 1.5 litres of water or homemade broth and boil for 10mins

  3. Roast the almonds until they become beautiful color and start realising its wonderful smell (Heaven for senses!)

  4. The roasted garlic is ready to be peeled, when peeled, put it into blender, then add your broth (you made in the pot), almonds, rye roll and a pinch of salt. Blend it all to get a smooth cream soup

  5. When the soup’s ready, serve it in small bowls decorated with orange, fresh parsley and optionally with crunchy and delicious rye croutons! Ok maybe not optionally but definitely!
