Lemon & Zaatar Baked Potato with Tofu Sooo Good! Vegan & Gluten Free. The humble, modest potato which for for centuries has fed millions, its simple greatness! I do not know about you but I in my early life ate them mostly boiled, often with delicious dill or in the form of chips. That’s always been a family favourite. Only occasionally it landed in a vegetable salad,  or potato pancakes or another favourite one which was ‘kopytka’ ‘little hooves’ similar to gnocchi. However, over time, the scope of its use began to expand and vary.

And it all started on a small island near mainland Europe called United Kingdom! During my years living in the UK I have to admit that a potato took on another dimension. There were even times when I ate them roasted, with skins.  A funny anecdote I have in my memories which I want to share. This is when my dearest grandpa was steaming them with skins for the farm animals he kept and every now and then he would eat one and my grandma would laugh at him because she considered eating potatoes with skin rather weird, something that only farmed animals did. In England, this habit of eating them with skin on is very popular, in fact I would even be brave enough to suggest, it’s a delicacy! It’s often served for lunch with the addition of beans, tuna or butter. Another one also very popular potato delicacy I learnt about and enjoyed in the UK are ‘potato wedges’ which are a baked potato skins / thick wedges. And of course, last but not least, the famous traditionally wrapped in newspaper, thick served with vinegar and salt chips. Please forgive me my English friends, but I simply could not fall in love with this one! Not my cup of tea.

In fact, during my travels in Europe and watching millions of culinary programs , the truth of the matter is that this  humble potato is always one of the most commonly consumed vegetables. For Spaniards there is no tapa if there is no potato! Greeks love them with spinach, as well as other habitants of the Balkans. And the Italians? Hmm during my visit it was mainly pizzas and pastas, though modest potato certainly occasionally landed on the table. Ireland, the Scandinavian countries, Germany, Benelux countries there is not many places where one can’t buy a bowl of chips!  For me it’s like a wonder veggie, ordinary, yet so extraordinary.

So today, moving onto the recipe. Baked potato with skins (sorry grandma, but I’ve joined the skin-on fan group too) beautifully and creatively presented, lemony, zaatar’y and full olive oil with crazy and spicy black pepper tofu.  Yes, lemon and zaatar are the perfect lovers! Recipe below: Lemon & Zaatar Baked Potato with Tofu Sooo Good! Vegan & Gluten Free.



  • time baking potatoes for 50-60 minutes; plus prep 15 minutes
  • difficulty easy
  • diet vegan / plant based
  • 3 servings



  • 6 medium potatoes
  • 1 lemon
  • 6 cloves of garlic
  • 1/2 cube of tofu
  • olive oil extra virgin
  • 1 heaped tablespoon ground black pepper
  • 1 teaspoon zataar (you can use oregano)
  • sea salt or Himalayan salt



  1. Warm up the oven to 200°C
  2. I wash potatoes well (bake them in the skins)
  3. Then I cut them about every millimeter to get the thin effect. Next I put them into the oven along with the head of garlic (garlic I bake about for 30 minutes)
  4. Next I cut tofu into small strips, salt it lightly and add the abundance of black pepper. I fry it on a frying pan until it becomes crispy. After frying it I set it aside
  5. Then I slice the lemon into wedges boats, put them aside
  6. The ready baked potatoes I put onto a beautiful plate, squeeze over some lemon and treat it with a generous amount of olive oil. Successively I put pieces of pre-prepared crisp and peppery tofu inside the potato (my mouth water leaks writing it even though I’ve already eaten)
  7. I pick out the baked garlic, peel it and and push into the free space within the tofu
  8. At the end I sprinkled zataar over the whole plate
  9. That’s it! Grab the whole potato into your hand and get a chunky bite letting the crunchy, lemon’y, zaatar’y and gently spicy miracle to happen inside you mouth
