Spicy Caramelised Beetroot Puree

The good old beetroot but today served in a much more sophisticated way, perfect for your Christmas table. Especially when you are looking for a light, healthy and delicious snack. Also a great choice just in case you want to boost your energy levels and treat yourself to something good. Beets are a popular vegetable in Polish cuisine. I usually add beetroot to my soups (I love my borsch with kidney beans), cakes or juices. However, this time I decided to give them a new life. I baked the beetroots in the oven, as they are so much sweeter when cooked this way. Next I combined them with the amazingly sweet and delicious Medjool dates and this ended up being a spot on choice. Especially perfect for those with a sweet tooth.

To give you an idea of the goodness of this humble veggie, it has tons of vitamins and minerals that will strengthen your immune system. A great source of folic acid which is vital not only for pregnant women, but also those who would like to become pregnant. It’s an amazing vegetable (according to research) helping to lower blood pressure.

  • diet no gluten, dairy, meat, sugar, yeast (vegan but you can twist it the way you like)


  • 10 medium beetroots
  • 1 peeled garlic clove
  • 4 medjool dates (with seeds removed)
  • ½ big cup of unsweetened soya or vegan type yoghurt  (or other if you prefer)
  • 1 small chilli pepper- without seeds
  • 4 tbsp of olive oil (extra virgin – search for those with subtle taste)
  • 1 teaspoon of Himalayan salt


  • chive
  • 10 walnuts or pecans fried on a dry pan and crushed
  • 2 dried figs cut into thin strips
  • cashew cheese (make your own) or optionally use any spread like cheese, vegan style or whichever one you like


  1. Warm up the oven to 190 – 200ºC
  2. Wash beetroots, put them on a baking tray and bake them for about 1h until they’re soft. (You can check it with the fork)
  3. When beetroots are ready, let them cool down and then peel them
  4. When peeled, put them into a blender with the rest of the ingredients. Then blend it to get a smooth puree
  5. When puree is ready, put it into your favourite bowl, decorate with chives, nuts and your chosen cheese
