Cheese made with cashew nuts is a great choice for those with dairy allergies, vegans, or those open to new, interesting tastes. Unfortunately, this is not good for those with allergy or intolerance to nuts. Cashew cheese is a perfect spread you can put on breads or pastas or the grilled vegetable plate. time 10 minutes (plus 30 minutes soaking cashews)
diet no dairy, gluten, sugar, meat (vegan)
WHAT YOU NEED
- 2 cups of cashew nut (soak in hot water for at least 30 minutes before, ideally for longer or even from the night before)
- ½ cup of inactive yeast flakes
- 1 teaspoon Himalayan salt (or sea salt)
- ½ teaspoon of hot mustard
- 1 tablespoon of apple cider vinegar
- juice of ½ lemon
- 3 cloves of garlic
Drain the cashews of water and put into the blender
Peel the garlic and together with the other ingredients add them to the blender
Blend all until you get a spread like texture. Blending time depends on the strength of the blender. Vitamix / Thermomix work great here.
To all the above ingredients, I add 5 dried tomatoes which I soak for 30 minutes before adding to the blender
To all of the above ingredients you can add quality oregano. It may be dried
