Raw Buckwheat Pancakes with Figs

How many times can one eat porridge for breakfast? Okay, don’t beat me up I know some of you can even eat it three times a day! Don’t worry I am saying it with a wink and smile because I adore oatmeal with all the different delicious of  toppings available. But, every now and then it’s nice to swap it for pancakes. Not just ordinary pancakes, I mean Buckwheat Pancakes, delicious and very easy to make.

I treat myself at least once a week to Buckwheat pancakes. Well, why would I? Buckwheat is a great source of vegetable protein. Yes, that’s right. You can get essential protein from plants not only dairy and meat. Thank the TV for that misconception. These are the easiest pancakes I have ever made. Not just simple but delicious, fast and healthy breakfasts treat. And when you put some seasonal ripe fresh fruit and a little bit of maple syrup on top! Yum…now take the first bite… No more talking!




  • time soaking overnight plus 15 mins morning preparation 
  • difficulty easy
  • diet  no sugar, dairy, nuts, eggs (healthy and vegan)


  • 100g raw buckwheat (for 5 small pancakes)
  • 1 tbsp xylitol
  • a pinch of Sea or Himalayan salt
  • 2 dried figs
  • 1 tbsp pomegranate seeds
  • a pinch of quality cinnamon
  • 1 tbsp of maple syrup
  • coconut oil for frying (or rapeseed oil)


  1. Soak the buckwheat overnight
  2. In the morning drain, rinse in clean water and drain again
  3. Blend the buckwheat to get paste, then add xylitol, a pinch of salt and mix it all in
  4. Heat up the frying pan, melt the oil on it and form small pancakes using the tablespoon
  5. Fry one minute on each side, until pancakes start getting the lovely light brown colour
  6. When pancakes are ready, put them on a plate, sprinkle with a pinch of cinnamon and pour some sweet and delicious maple syrup on top
  7. Decorate pancakes with pomegranate seeds and dried figs
