Oreo-like Raw Vegan Cookies

This recipe was created very spontaneously in response to the needs of my friends whose kids love Oreo cookies. Read the ingredients on the packet and you will realise they do not necessarily contain the healthiest of ingredients, are full of sugar, preservatives, emulsifiers and so on. But as I always say, there is no point depriving yourself and your loved ones of their pleasures but it’s always worth making a healthier, yet just as delicious, alternative. Small effort and yet so much goodness.

RECIPE

  • diet no gluten, sugar, dairy (vegan)

WHAT YOU NEED

Cookies:

  • 10 medjool dates (you can use different type of dates, but if they are very dry, soak them in hot water first)
  • 1 glass of almonds (or sunflower seeds if you’re allergic to nuts)
  • 2 tbsp of cocoa powder

Cream:

  • 1 can coconut of cream (chilled overnight in the  fridge)
  • 1 vanilla pod
  • 1 tbsp of xylitol powder
  • 1/3 glass of melted coconut oil (virgin)

METHOD

Cookies:

  1. Remove seeds from the dates and add them to a blender
  2. Almonds next (or sunflower seeds) – fry a little until they get a lovely golden colour and also add them into the blender
  3. Add cocoa powder and blend it all together to a smooth paste
  4. Roll out the paste evenly and use a cup to make cookies
  5. Wash the blender

Cream:

  1. Melt the coconut oil and pour into a blender
  2. Add coconut cream (thick part of coconut oil)
  3. Add vanilla, xylitol powder and blend it all to get a smooth and creamy filling
  4. Chill the ready made filling in the fridge for 20 mins. This will make the filling more firm and easier to work with
  5. Spread the cream on each cookie and put a second cookie on top. Press the two cookies together to create your healthy Oreos! Share with the kids!
